Brined Gooseberry (Amla)/ Gooseberries in Brine/Amla in Brine / Mitta Gallele Avalo
Brining is treating food with brine or coarse salt and preserving the food with enhancing tenderness, flavor along with additions such as herbs, spices, sugar, caramel and/or vinegar. Meat and fish are typically brined for less than twenty-four hours while vegetables, cheeses and fruit are brined in a much longer process known as pickling and could be used for later. Here Gooseberry/ Amla is brined which could be used in future for preparing chutney, Amla Pickle etc.
How to brine gooseberries: Wash gooseberries well and pat them dry. Take a vessel and Heat water in it. Add salt. Bring it to boil. Switch off the flame. Put the gooseberries. Add slit green chillies (opt) allow it to cool. Store this in an air tight container/ glass jar. After 3-4 days refrigerate it. Glass Jars or Ceramic Container with tight lid should be used for storing.
