Appo is a simple Rice dumpling made with Idli Batter using "Appo Pan". Appo served with Sambar & Coconut Chutney is an ideal combination.

Ingredients for Batter:
Soak the Urad dal and Rice separately for atleast 2-2 ½ hrs (For 1 cup urad dal - 2 ½ cups of idli rice/ raw rice). Grind it separately. The consistency should be smooth. Mix these and add salt. Keep this mixed batter overnight. Next day Appo can be prepared using batter in an Appo Pan on medium flame after applying little oil to the pan. Turn each side till it is cooked and becomes golden brown.
Chutney Recipe: Grind 1 cup coconut gratings with 2 or 3 green chillies, 1" chopped ginger, little tamarind & salt into a smooth paste. Transfer into a bowl. Add required quantity of water. Season this with mustard seeds, curry leaves & red chilli pieces in oil.
Shallot Sambar: Wash well ¾ cup Tur dal and pressure cook upto 4 whistles (or 1 Whistle and then low flame for 10 minutes). Remove it from pressure cooker and then mash it well and keep it aside. Heat a Pan, add little ghee and slightly fry shallots (12-15) and then cook it with chopped tomato (1) till it becomes soft. Add Sambar powder and salt. Pour little tamarind extract. Now add previously mashed tur dal and mix well. Add required water and bring it to boil. Season with mustard seeds, curry leaves and red chilli pieces in oil. Add little asafoetida powder. Garnish with chopped coriander leaves.
