Hittu /Ittu / Sannan/ Ramdhan (Mangalorean Style Idli) Prepared in Banana Leaf with Yam pickle (Surna nonche) & Chutney

Ingredients:
Soak urad dal (1 cup) & raw rice / idli rice (2 cups) separately in water for 6 hours. Wash the soaked urad dal & grind it into a fine paste. Transfer this into a vessel. Now wash the soaked rice & grind it into a coarse paste. Mix this well with the ground urad dal paste. Add salt. Keep under cover over night. Next day beat the batter well. Place a banana leaf in a container & pour the batter. Steam for 20 minutes in a steamer. Cut into pieces. Serve with Yam pickle (surna nonche) & Chutney
Yam Pickle/ Surna Nonche: Chop Suran (Yam) finely. Wash the pieces. Drain off the water. Apply salt and keep it aside. Heat oil in a pan and fry the chopped Suran (after squeezing it) until crisp. Grind roasted Red Chillies with Tamarind water into a fine paste. Before taking out add mustard seeds, methi seeds and asafoetida (previously should be roasted with little oil and kept aside). Grind it. Transfer the masala to a vessel and boil it. Add fried Suran pieces. Add salt (if necessary) and season it with mustard seeds and curry leaves.
Coconut Chutney: Grind coconut gratings (1cup), 2 green chillies, small piece of ginger, tamarind & salt to a fine paste. Transfer to a vessel. Add desired quantity of water. Season with mustard seeds & curry leaves in oil.
