Sun Dried Ragi Vermicelli (Shevai) Usli /Nanchna Shevai Usli ~ A Stir-fry prepared with Sun Dried Ragi Vermicelli which is ideal for breakfast.
Recipe: Soak the Ragi Vermicelli/ shevai (store bought – this is widely available in stores in South India) in water for 20 to 30 minutes or till it becomes soft. Drain the water completely. Heat oil/ ghee in a pan/ kadai, then splutter mustard seeds, add urad dal and fry until slightly brown, now add slit green chillies, curry leaves & saute it. After this add drained Ragi Vermicelli/ Shevai & salt (To Taste). Mix well. Cook under cover on low flame for 10 minutes. Switch off the flame. Garnish with coconut gratings. Shevai Usli is ready to serve.
