Surna Nonche/ Yam Pickle  ~ Konkani style Yam Pickle which goes well with Shevai / Hittu




Ingredients:

  • Yam pieces /Surnu - 1 cup
  • Dry red chillies - 10
  • Mustard seeds - 1 tsp
  • Fenugreek seeds – ¼ tsp
  • Asafoetida - small piece
  • Tamarind - marble sized piece
  • Salt - to taste
  • Oil - for frying
  • For Seasoning
    • Mustard seeds - 1 tsp
    • Curry leaves - few
    • Oil - 1 tsp


Recipe:
Peel the skin of yam, wash well, chop it into small cube sized/ shaped pieces. Apply salt & keep it aside for 30 minutes. Then drain off the water completely. Heat oil in a kadai, deep fry the yam pieces until brown & crisp. Keep it aside. Heat little oil in a pan, roast red chilies & keep it aside. In same oil roast mustard seeds, fenugreek seeds & asafoetida. Grind roasted red chilies, tamarind with little water into a fine paste. Now add roasted mustard seeds, fenugreek seeds, asafoetida & grind for a second. Heat a vessel, then transfer the ground paste in a vessel, add salt & Water. Bring it to boil. Turn-off the flame. When it cools add fried yam pieces. Season with mustard seeds & curry leaves in oil. Serve with Shevai / Hittu.
