Kooka Upkari/ Chinese Potato Stir-Fry

Kooka UpkariRecipe: Scrape the skin of Chinese Potato (Kook) & clean well with water. Chop it into pieces. Put these chopped pieces in a vessel containing water (This is to prevent colour change). Heat oil in a kadai/pan, splutter mustard seeds, and add red chilli pieces & sauté for 5-8 seconds. Now add chopped Chinese Potato, salt & water. Cook under cover until soft. Garnish with coconut gratings and serve.
