Khajra Paysu/ Khajur Kheer/Dates Kheer with Jaggery/ Dates Pudding
Recipe: Deseed dates (1cup), chop dates into pieces & soak in warm water (½ Cup) for 30 minutes. Grind this into a semi smooth paste in a mixer grinder. Keep it aside. Melt Jaggery (½ Cup) with little water & strain it in a bowl & keep it aside. Grind coconut gratings (2 cups) with water into a fine paste in a mixer grinder. Strain it in a bowl (1st thick coconut milk) & keep it aside. Grind again & strain it in a bowl (2nd coconut milk) Keep it aside. Heat ghee in a kadai, roast few cashew nuts, raisins till slightly brown & keep it aside. In the same pan add ground dates paste & saute it for a minute. Now add melted jaggery water & cook it on low flame. Now add thin coconut milk (2nd Coconut milk) & mix it well. Bring it to boil Cook on low flame for 3 minutes. Now add cardamom powder, thick coconut milk. Cook it on low flame for 3 minutes. Do not boil after adding thick coconut milk. Switch off the flame. Garnish with roasted cashew nuts & raisins.
Please note: Dates are sweet. Adding jaggery is optional. Adding jaggery enhances the taste of this Kheer.
