Ponsa Gharai/ Ripe Jackfruit Kheer ~~ Konkani Style Jackfruit Payasam ~~ Jaggery based Seasonal Dessert Prepared with Ripe Jackfruit
Recipe: Deseed the ripe jackfruit (1 cup) & cut into square pieces & keep aside. Grind grated coconut (1 cup) with water into a mixer grinder & extract the first (1 cup) & second (1 cup) coconut milk & keep it aside. In a pan melt jaggery powder (½ - ¾ cup) with water (2 to 3 tbsp), strain it & keep it aside. Heat ghee (2 tbsp) in a kadai/ pan, roast few cashewnuts until slight brown & keep it aside. Now add chopped ripe jackfruit & saute it until soft/ almost cooked. Now add melted & strained jaggery. Bring it to boil. Now add second coconut milk. Bring it to boil. Now add first coconut milk. Bring it to boil. Add cardamom powder (1 tsp). Turn off the flame. Garnish with roasted cashewnuts.
